Pecan Pie Muffins Are Your New, Favorite Bite Sized Treat

What do you grab when you want a special treat? Everybody seems to have their own favorite and for some people, it is something sweet but for others, it is something salty. Although you may have little treats that you give yourself through the day, one of the big treats that is undeniably delicious is a great piece of pecan pie. If you are somebody that loves the taste of pecan pie, I have a special treat for you.

Imagine all of the taste of a special piece of pie condensed down and put into a nice, warm and moist muffin. It is absolutely everything that you could ever possibly want out of a treat and they are super simple to make. Some people will save these as an autumn treat but you can make them any time of year and enjoy them with your friends and family or just as a personal treat to yourself.

 

To make, preheat oven to 350 degrees. Grease muffin tin with cooking spray and set aside. Mix butter eggs and brown brown sugar together until creamy and set aside.

 

Add flour and pecans and mix.

 

Mix until well combined.

 

Spoon batter into muffin tins.

 

Add a few little pecans on top and bake for 15-18 minutes.

 

Cool and enjoy!

 

These are great for any time you want a treat

Ingredients:

1 cup packed brown sugar
½ cup flour
2 cups pecans, chopped
⅔ cup butter, softened
2 eggs, beaten
12 whole pecans for decoration

Directions:

1. Heat oven to 350 degrees. Grease muffin tin with cooking spray and set aside.

2. Mix sugar, flour and chopped pecans together, in a separate bowl beat butter and eggs until creamy, stir in dry ingredients until just combined.

3. Spoon batter into muffin tin and bake for 15-18 minutes.

4. Cool and enjoy!
